Raw Chef & Sustainability Coach Certificate

In this online you will not only learn to become a certified gourmet raw chef, but you will have the science and insight into sustainable living, and its diverse aspects. You will learn sustainability practices and skills that can be used to help heal the planet from pollution and exploitation. New forms of self-awareness and confidence will teach you to teach future generations how to raise more fulfilled, co-responsible children.

The program touches on many areas of life and culture that are not regularly associated with eating a healthy diet but are intricately connected and have global impact.

*This is a 12 month intensive study course resulting in a certificate

Students acquire 30 points, present at least 6, 5-page papers or presentations and take all of the following courses:

 The Johanna’s Raw Foods Academy certificate will enable you to:


-Work as a raw chef
-Coach institutions and corporations in healthier sustainable company culture
-Teach raw food and sustainability courses in schools
-Create your own coaching business
-Raise super-healthy families

In addition to papers and presentations, each student will complete a book. The knowledge obtained is gathered in this book in handwritten diary entries with drawings, recipes, and art.

The program includes subject matter classes, hands-on experience, working in food production or catering, and creating recipes and meals to share in the group. While there will be lectures by Professor Sophia and other professionals, the students will be researching and preparing lectures for each other as well to practice their own teaching skills.

The structure of the program is such that the students have assignments week to week. They have one weekly online class with Prof. Sophia 3 times per month and many email exchanges and online group conferences and collaborations. Every 4th week of the month is a “flex week” in which students create their own activities or outings, work on their books and projects or research their next presentation. While intensive, our RAW CHEF & SUSTAINABILITY program is non-competitive but often collaborative. Presentations as well as pop quizzes are prepared by all participants for each other and/or with each other to deepen the knowledge.

Students hand in their work regularly online for the upcoming classes and projects. Our tuition is currently still at a very low rate as we have applicants from across the globe.

The course meets every week for class and assignments in our closed online group.

Tuition: $9,000 for the 12-month course paid monthly in $750.00 payments.

Who? Professor Sophia is a highly experienced educator who has taught at Columbia University, SVA, and Yale University, among others. She has a comprehensive academic background as well as an MA in Waldorf education. Teachers at the academy also include experts from around the globe.

Students need to want to have a fun and exciting learning experiences, start making money while studying, have the will to dig out their creativity for awesome healthy vegan and raw vegan dishes and become aware of the global impact everything we do has on planet Earth.

How? Bringing thorough academic research into a raw food and sustainability program enables our certificate holders to become educators themselves.

What? The concept of writing your own book over the course of your studies further enhances the student’s ability to carry forward the knowledge acquired not as a replicator of the information taught but as a thinker exploring further into the future.
In addition, the basics of business building enables certificate holders to set up their own specific businesses with the confidence of making a living in this growing field.

1.  Growing Fresh food - Indoors and Out

This is a hands-on course that teaches the very basics of growing sprouts from seeds and legumes in any setting, residence or culture. It also teaches how to set up an organic garden small or large. Students will each have their own indoor sprouting kit and, if available, a small piece of garden outdoors to each grow their own edible plants. Online students will create their indoor growing trays or bowls wherever they are. Their outdoor gardens can be on front lawns, in community gardens, in farm settings, or can consist of wild foraging for native edible plants in any part of the world.

2. Green Drinks, Salads and Green Dishes


Creating a healthier body and a healthier planet involves, it seems first and foremost, more green plants in our food and on the earth. The many benefits leafy greens bring to life to our bodies and our planet include oxygen promotion, clean air, humidity retention, high levels of vitamin C and A, but also converting arid soils to fertile soils along with acidic digestive systems to more alkaline digestive systems. Green juices and green smoothies have become a worldwide phenomenon. There are now juice bars in every major city in the world, and the green smoothie has become a common “healthy drink”.

3. Raw Breads and Cheezes, Cakes and Treats

Johanna’s Raw Foods does not teach changing your respective country’s food culture to a different one, but instead teaches students to recreate traditional dishes in the raw. This is of particular importance because food traditions are an integral part of every culture and need to be honored as they create community and cultural identity. Learning how to recreate basic staples as well as comfort foods or foods for celebrations is therefore central our teaching. Of course, honoring traditions does not prevent us from creating new flavors and there with creating new traditions that arise from the old.

4. Raw Food Manufacturing for the Mainstream


Raw food manufacturing is another element of our certificate that is unique. Making raw food for the commercial market includes a very different set of rules, regulations, and limitations within which we can bring new foods to the mass market. Understanding the merchandising of food is a crucial element in building a business with the knowledge obtained in this course. This course will both teach the hands on procedures that go into manufacturing and the basic theories of our food market economy in the world today.

5. Attachment Parenting and Raising Healthy Children

You may ask what does attachment parenting have to do with raw food or sustainability. We only become human beings if and when we are raised among other human beings. How this is done determines our degree of ability to function freely in this world. One of the differences between traditional parenting and attachment parenting are the different assumptions that a newborn child is A. an empty bag that needs to be filled with skills and information, or B. a full bag of skills and talents that need the care and love to blossom into full individual beings. A. produces better traditionalists, while B. produces better creators and thinkers.

6. Cosmetics, Body Hygiene and Cleaning

Each culture on the planet has developed ever changing rules and expectations of appearance for the members of their societies, and for the housing they inhabit. Cleanliness, order, and beauty are therefore features that belong to human culture. As creative beings, cultures have often driven these rules and expectations of appearance to a degree that becomes destructive to the individual human body. Just to mention a few, think of foot-binding in the Chinese culture, using DDT and chlorine to clean the house, the practice of neck extension in Burma, the use of lead in the Roman culture, genital mutilation, and the use of chemicals and plastics in our culture today. In this course we will explore how this need for cleanliness, order and beauty has lent itself to the massive toxic cosmetics and cleaning agents industry, and we will offer intelligent biodegradable alternatives.

7. Clothing, Furnishing, and Building Materials

Oil extracted from the Earth is, of course, initially a “natural” material formed from plant and rock matter. We extract it from the deep earth and recompose its natural elements into “synthetic” materials that do not naturally occur on this planet. This process has led to the millions non-biodegradable chemicals and plastics that we now use to make almost everything in our world from clothing to skyscrapers. While these synthetic materials have many practical applications they also constitute a heavy burden on our physical body and on the planet because of their non-biodegradability. Everything that cannot be re-entered into the biological lifestyle disrupts it and therefore is a threat to life on planet Earth. The world “sustainability” in and of itself means supporting continued life on the planet. Yet, just as there are endless non-biodegradable compositions, we humans can also create endless Earth compatible materials. These are materials that reintegrate into the life cycle after use.

8. Politics and People Management


The paradigm of societal structures in the world has been that of hierarchies for the last the 6-7,000 years. Mind you, only for those 6 - 7,000 years. We are too fast to assume that these empirical societal structures are the “normal” order of human societies. There is much evidence that this was not the norm at earlier times. And if that were true fro recent times, there could never be a demand for “equal rights”. There could never be a demand for individual rights. There could never be a demand for basic human rights. However, all of these demands have occurred and are still pursued in our lifetime. This course serves to research into the new societal structures that humans around the globe now seek and that break down the hierarchical empirical structures of this past era.

9. Solar and Other Energy Sources


Science taught us that all matter is nothing but organized energy. Therefore, it stands to reason that energy sources are all around, about, within, and without us. The fact that we can channel and reshape this energy is testament to our human ability to shape energy and to the fact that we can either use it to destroy, or to construct. Figuring out the best forms of using energy constructively is one of the tasks of our time. It is in this course that we learn the interdependence of our current market system and finite resources for capitalism to function. Many forms of energy are infinite in nature in our universe. They do not lend themselves well to ownership and proprietary rights. But they provide less destructive sources of energy for the next era.

10. Footprint and Global Impact


7 billion people eat every day. Currently the ‘food’ they eat includes 56 billion ‘farmed’ and slaughtered animals per year. If the same land or ocean areas used to grow animals for food were used for plant food, this would yield at least 7 times more food for humans. This means that the planet could easily feed 50 billion human beings or produce huge amounts of plant-based plastics and materials on that same farmed territory. Furthermore, humans eat dead animals in spite of the fact that the human body is akin to that of primates and therefore herbivore. Eating a species-alien diet, a diet that overrides the natural biological digestive processes and nutritional needs, creates a plethora of dis-ease and aberration and shortened life span and deprives the majority of humans of a joyful life experience. Exploring the end of the era of self-destructiveness and planet pollution in the name of unnatural food habits is at the core of this course.

11. Education Systems for your Kids and Grandkids


Our child-rearing and our educational systems perpetuate the status quo or move society forward into more awakened, more conscious cultures. Transitioning from competition to contribution, from the quantitative scale to the qualitative scale of values, and from forcing equality to the lowest denominator to inviting the highest level of the individual, different talents causes upheaval of our entire educational systems. Currently these systems are based on the Prussian military rank and file system using a highly authoritarian value structure within which everything is on a scale from 1-10, in which value is gauged by being better than others rather than better than yesterday. In a conscious society requires its members to think and be creative, not just to follow orders. Students in this course will think about and offer their own alternative education concepts and explore them with each other.

12. Work is Life, Self-Expression and Culture

Empirical structures, and particularly the industrial age have turned “work” into necessary drudgery to stay alive and feed our families, therefore work has become separate from what we consider “living”. We even have come to believe that humans would rather not work and just sit and consume media. Research has shown that this does not lead to a joyful existence, but rather that every individual yearns to contribute, be recognized, and matter in the eyes of community and society through the work they contribute. To create a society in which work is life and life is meaningful, work has to be meaningful and therefore joyful. All our famous motivational speakers speak about this human need to pursue their true passion and use it for life, love and wherefore work becomes part of their passionate life. This class encourages students to think about the many ways in which “work” can be restructured.
